Vance’s Veggie U Lesson Fuses Science and Nutrition

Fourth graders at Vance Elementary School got an extra dose of veggies and a whole lot more with Veggie U lessons which aim to combat childhood obesity through a cooperative curriculum that involves some of the area’s best educators, chefs, dietitians and physicians. 

Students tasted samples of microgreens, planted a worm farm, studied soil and learned about composting. They also created their own recipes, tasted new vegetables and participated in a new cooking class from Chef Murray Healy. The curriculum, which meets the science educational requirements set by the “No Child Left Behind” act, focuses on enriching student’s knowledge of food and nutrition.
